Tokaji eszencia: the juice that drips from the aszú berries under their own weight
Eszencia is the incredibly thick juice that drips from the aszú berries under their own weight. Its sugar content is at least 450 g/l and is often around 500–700 g/l. It ferments slowly over years, and its alcohol content is only a few percent. It is rare and expensive, and its finish is exceptionally long.
The chart shows clearly how big the gap between aszú and eszencia is: the minimum sugar content of eszencia is 3.75 times today’s aszú minimum.
