Szamorodni: “as it grew”

Szamorodni means roughly “as it grew”: the bunches are picked without selection, together with the noble-rotted berries.
Sweet or dry?
If there are many aszú berries, it is sweet (typically up to about 100–120 g/l); if there are few, it becomes a dry wine.
How is it aged?
Dry szamorodni is traditionally aged in barrels that are not topped up, often under a film of yeast, which gives it an oxidative, nutty, sherry-like character.
